Description
The location of these vineyards is called “Finca Los Halcones”, a
unique setting surrounded by pine groves, holm oaks and aromatic
plants, nestled in the Cabriel Valley declared a Biosphere Reserve
by UNESCO. The decision to plant the foreign Viognier white grape
variety, a variety originating from the Rhône Valley, was due to the
similarity of our terroir, a continental climate with Mediterranean
influence, with deep chalky, clayey and sandy soils; and the necessity
to look for late ripening and higher acidity white grape variety, as
our Macabeo grapes were suffering enormously from climate
change, with a rapid ripening which led to these grapes having a
high alcoholic and low acidity content. Quality grapes which will be
able to ferment in French oak without losing any of their freshness,
preserving their acidity. Thanks to everything that surrounds these
grapes, the Finca Los Halcones Viognier is a harmonious wine, with
personality and hallmark signature.
